Outstanding Ex Dairy prime rib from @johndavidsons this is easily one of the finest steaks I’ve ever eaten. ![]()

I reverse seared until it hit 43°, opened up the vents and added the cast iron grill plate and gave it a hot fast sear then rested until it hit 56°c
The restaurant will be closed for a few days at the start of my May as me and my family are taking a little break.![]()
